Here is a yummy everyday recipe for lunch, snack, dinner, oh and why not even breaky. Love me some fitters especially when they're packed full of goodness.

MKM ACTIVE VEGGIE FRITTERS RECIPE

 

Total time 25-30 MIN

INGREDIENTS

1/2 zucchini grated

1 medium potato grated

1/2 small sweet potato grated

1/2 cup peas

1/2 cup corn

2 eggs

4 tblspn rice flour (or other)

1 shallot finely sliced

1 cup chopped spinach leaves

1/4 cup shredded cheese (to liking)

1/4 cup parmesan cheese (to liking)

Salt & white pepper

 

DRESSING

4 tbl spn sour cream

1 tbl spn dijon mustard (to liking)

Squeeze half lemon juice

 

METHOD

Mix all ingredients into a large bowl

Heat pan with spray oil

Use your hands to scoop ingredients and flatten to add to pan

Cook approx 5 min one side, flip and cook further 4-5 min

Serve with smoked salmon, pickled onion slices 

 

TIP

Make a few hours earlier as the ingredients will stock together better in the pan
