VEGAN GF LASAGNE

INGREDIENTS
GF Fresh Lasagne sheets 
1 can drained and rinsed black beans
1 cup Vegan shredded cheese 
1 med grated sweet potato
1 med grated zucchini 
1 med carrot grated
1 Tin diced tomatoes
2 tbsp tomato paste
Approx 4 tbsp GF Soy sauce
3/4 cup of veggie stock
1 brown onion
3 cloves of garlic
2 handfuls or more of spinach leaves
DIRECTIONS
Brown diced onion and garlic with olive oil in Pan
Add sweet potato, zucchini and carrot (stir for a min)
Add veg stock, GF Soy Sauce, tin tomatoes and tomato paste (simmer for 10 min)
Add the spinach and drained beans (simmer until spinach wilts) remove from heat
LAYERING
Line tray with baking paper and spray oil
Spread a small amount of sauce on the bottom
Layer Lasagne sheets
Add some of the sauce
Sprinkle some cheese
** Repeat the process until it's all done.
NOTE you don't need to add too much sauce and cheese between layers
ALSO you may wish to add other ingredient
Place in oven 40 minutes and serve with a nice salad
