BROCCOLI AND CAULIFLOWER SOUP

INGREDIENTS
1 broccoli
1/2 large cauliflower
2-3 medium potatoes
1-2 rashes of bacon (omit for vegan option)
1 ltr chicken stock liquid/or vegetable
1 onion
1/4 leek
2 garlic cloves
salt & white pepper
METHOD
Slice onion, leek and garlic to add to large pot
With 2 TBSP olive oil
Add bacon rashers
Once browned then add the liquid stock of choice
Allow to boil
Peel and dice potatoes add first to pot
Cut Florets off broccoli and cauliflower (I also use stems) add these to the pot
Once you have reached boiling point, turn down to simmer for 20-25 minutes
Add salt and pepper to your tasting
Remove from stove top allow to slightly cool before you blend smooth with a processor or stick mixer
ENJOY with a dollop of sour cream and bread
